Merry Christmas

Brew Chews and Hop Pops

Latest additions to our list of confections are Brew Chews and Hop Pops.

Brew Chews are caramels made from beer.  Currently we have 3 flavors available:
Pumpkin Chews made from Pumkin beer that is out at the moment, so this will be a seasonal flavor,
Stout Chews and Malt flavor chews.  The Malt flavor chews contain no beer so  if you love the flavor of malt then this one is for you.

Then there is our Hop Pops.  Ever been at work or driving and would love a pint........... well then, suck on a Hop Pop.  If you are a HopHead then this is for you as the bitter taste of the hops really comes through.  A real treat for $3 each.

Our website

Our chocolate tasting at Wine 101 in Wake Forest went great last night.  Thanks to all who tasted our truffles,.  We received very positive feed back.  As we line up more tastings we shall post dates and locations here on the blog.

We are currently building our website - http://www.gerdanchocolates.com/.  It you visit the website, it will tell you that it is under contruction and to visit this blog.  Hopefully we'll have the website up and running in a few weeks.

Back to chocolates...... with all the autumn flavors out now we will have a few seasonal flavors on our menu so keep checking back.  We will be updating the header (our menu) shortly.

Summer Seasonal Selection

We took the opportunity to hone our airbrushing skills while using some fresh seasonal ingredients.

Our seasonal selection includes:
  • Blueberries from a friend's garden. A rich dark chocolate ganache with a drizzle of blueberry puree, encased in 64% Callebaut dark chocolate and airbrushed in blue and white cocoa butter.
  • Next was Bartlett Pear, grown in our own back garden. A puree was made from the pears, then infused into a dark chocolate ganache and airbrushed in yellow and green.
  • Fresh raspberries from the Farmers Market gently mixed with a dark chocolate ganache, then airbrushed in red and white.
  • Our Rain Forest truffle is packed with an almond, cashew, pistachio and tamarind ganache.  We molded this truffle in a cocoa pod shape airbrushed in orange and green cocoa butter.

Here is our first attempt at making a box out of chocolate.   Fill it with truffles for a true chocolate experience...... have your box of chocolates and eat it too!

Boxes


Thought I'd post a photo of the boxes we used to for a recent order.  Each box contained a single Fleur de Sel Caramel. These are ideal for party or wedding favours.

Summer Truffle Selection

We had a GerDan Chocolate tasting on Friday June 10 at the Gilded Palette Gallery in Wake Forest.   Our Toffee and Turtles will be sold there soon.  We'll let you know when, just sign up for our Tweets.

How to order

We've been asked "How do we order your truffles and turtles?"
Just go to the comments section  under any post, add a comment and it will go straight to our email in box.   We won't publish your order but that is how the comments section works so we can view the comments before publishing.  As we don't have PayPal yet. just email us your order and we will give you the address to forward your check and when it clears we will send your chocolates. 

If you live locally (Wake Forest area) we will just meet in a convenient local spot and deliver the truffles to you.

New Flavours and some changes.

We’ve expanded our selection of Caramels.

Our Fleur de Sel remains popular as ever but we now have a soft caramel center too.  If you love Goat cheese then you will like the Cajeta.  It is a caramel sauce made with Goat’s milk, cinnamon, sugar. 

For our beer lovers we have introduced a Stout Caramel and an IPA Caramel.  Neither of these two beer caramels are covered in chocolate as we do not wish to detract from the taste.  The Stout Caramel has the subtle dark roasted flavour.  If you love the bitter taste of hops than the IPA caramel is for you.

Sorry no photos of the caramels, ate them all!

We had to remove the Macadamia Nut from our selection as, we cannot obtain them locally.  Can find plenty of salted Macadamia Nuts but we prefer to use the unsalted ones.

Selection



Above photos show Milk and Dark Chocolate selection of truffles.  Third photo down is our caramels and English Toffee.  Last photo is our S'mores on a stick.  Homemade marshmallow covered in chocolate and rolled in Graham Crackers.  Delicious.  Actually made these for kids but they are so popular with Adults that we are experimenting with different flavoured marshmallows.

S.L 2011-26

At last............... we can now sell truffles with alcohol in them.  State Law was passed on the 7th. allowing Confectioners to produce confections which contain no more than 5% alcohol by volume.  Now we will have to change our header on our blog and take out the word "flavor" under the Alcohol column.  A slight inconvenience.

Busy making English Toffee. Honeycomb, Turtles, Caramels, Truffles and Marshmallows for the Sale of Work this Saturday in White Levels.
The English Toffee is delicious as are the Banana Peanut butter truffles.

Valentine's Day

We were busy around Valentine's.  Here is an order we had for 3 dozen plain dark chocolates.  They weren't for V'day but rather a Birthday dinner.

New Adventure

Well, this is our first post on this new blog.  Making Truffles and Caramels and people actually asking us to make them for them, is definitely a new adventure for both of us. 


Hopefully, we can keep this blog updated to keep you posted on our progress.
